White Clover flowers from mid-May to September and is perfectly accessible to honeybees: its flower tubes are short, so the nectar is within reach. It grows almost everywhere on meadows, pastures and lawns and pours out very abundantly over months. Clover honey is light, mild and flowery and, because of its high glucose content, crystallises quickly; well stirred it becomes firm and creamy. As an ongoing summer flow it is hard to beat.
