Heather (Ling) flowers in high and late summer, with the focus on August and September. On sandy soils and in heathland areas it provides a genuine major flow with a very high nectar value, while the pollen value is low. Heather honey is amber-coloured, pungently robust in taste and gels because of its high protein content, becoming briefly liquid again when stirred. To harvest it, it must be pricked or pressed - extracting alone is not enough for this consistency.
