The sugary liquid that plants secrete in their flowers to attract pollinators. How sugary it is varies enormously: depending on the plant and the weather, the range runs from about 5 to 80 percent sugar.
The forager bee takes it up into her honey stomach, enriches it with enzymes of her own, and hands it over to the house bees in the hive. They repeatedly transfer it, fan out water, and only cap it once it is ripe.
How much nectar flows depends on soil, temperature, humidity and time of day. That is why the same nectar flow can turn out completely differently in two different years.
