Black salsify flowers from May to July with yellow, vanilla-scented flower heads. It is grown as a winter vegetable and harvested in the first year, so the flowers are only seen on plants that have been left standing. Where it is allowed to flower, it provides nectar and pollen and is visited by honeybees and wild bees.
