Spearmint flowers from July to September with slender, pale violet flower spikes. It is grown in herb gardens and used for tea and desserts; in North Africa it is the classic tea mint. If it is allowed to flower instead of being constantly cut, it is heavily worked and yields for several weeks. British measurements give around 9 micrograms of sugar per flower per day.
