Black locust, usually called acacia in the trade, flowers from mid-May to the end of June in hanging white racemes and yields very abundant nectar; its pollen supply, by contrast, is only moderate. Its honey is water-clear to pale yellow, delicate, and very sweet and stays liquid because of its high fructose content, which is why it is particularly sought after. It bridges the gap between the rapeseed bloom and the start of the linden bloom. Where there are stands of black locust, migrating is worthwhile.
