Safflower flowers in July and August with orange-yellow flower heads and is grown for cooking oil and formerly for dye. It comes from the Orient, roots deeply and copes very well with drought. In oil crop fields and flower mixtures it is a welcome forage source in high summer, when rapeseed and lime have long since finished.
